Recipe!

As noted in the past, when The Cop is at work, I cook things that I love but which horrify him.

Today I’m making Crispy Kale! It’s as yummy as potato chips (I have a potato chip problem…).

Crispy Kale

A bunch of kale, torn into bite-sized pieces and tough stems removed
1-2 tablespoons olive oil
sea salt or kosher salt

1. Preheat oven to 350F.

2. Rinse and salad spin the kale. Use a towel to blot any extra water on the leaves. Place the kale on the baking sheet.

3. Drizzle olive oil over the kale leaves and use your hands to toss and coat the leaves. Bake in the oven for 12-20 minutes until leaves are crisp. Check the kale at the 12 minute mark. If the leaves are paper-thin crackly, it’s done. If the leaves are still a bit soft, leave them in for another 2 minutes. Do not let the leaves turn brown. Remove from oven, sprinkle with salt and serve.

  3. I’m suspicious of this… but willing to try. Most things with oil and salt are pretty yummy.

  4. I actually just ordered a dehydrator today. I want to make raw flax seed crackers — they cost $6 for 4 ounces if I buy them at the store…

    And yes, Liz! Try them. They actually make me feel guilty when I eat them — they’re that good! :-)

    i relied weekly on my dehydrator in Cali. i guess i should get one here. it’s super easy to make flax seed crackers. i used to make them with tomatoes, and cilantro – really yummy. you just pulp some tomatoes and cilantro in the osterizer and then pour them over the flaxseeds, wait until they absorve some of the liquid, then spread on the trays and dry.

    you’d be frustrated with slow internet access and associated situations here. hehe.

  6. SOMEday I might have a kitchen. I like dehydrated veggie chips… They are especially good to have on the beach blanket in the summer.

  8. Well, I am just about to read the previous post, so I will be prepared to be disappointed. I read, ‘I have a potato chip problem’ and thought, ‘I have a popcorn problem. I like her.’ Then I read ‘KALE CHIPS’ and I thought–that is just fucked up! Just eat potato chips. But THEN, I thought, ‘I have a popcorn problem. Maybe kale chips are good.’ Are you messing with me?

  12. Okay, I tried this recipe. Oil and salt? Delicious! Too bad about that kale flavor! ha ha ha!!!

    Actually, they were better than I expected. Would it work with something less bitter?
